Vegan White Chocolate Ganache

Carrot cake is one of my fave treats that I have missed going vegan. The moist fluffy cake with tangy topping is perfect … but what if you don’t have access to vegan cream cheese? Well, why not try this recipe that uses easy to find ingredients.

This ganache will pair wonderfully with the flavors of carrot cake, offering a touch of tanginess from the lemon zest and juice while maintaining the creamy texture from the white chocolate and coconut milk. Adjust the amount of lemon to suit your taste preferences.

Vegan White Chocolate Ganache

Ingredients
  

  • 200 g NobleField Carrot Cake Slab finely chopped
  • 1/2 cup full-fat coconut milk use the creamy part on top
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup or agave nectar

Instructions
 

  • In a heatproof bowl, place the chopped vegan white chocolate and set it aside.
  • In a small saucepan over medium heat, warm the coconut milk until it just starts to simmer. Remove it from the heat immediately.
  • Pour the warm coconut milk over the chopped white chocolate. Let it sit for about a minute to soften the chocolate.
  • Gently stir the mixture until the chocolate is completely melted and smooth.
  • Add the lemon zest, lemon juice, and maple syrup/agave nectar. Mix well to combine.
  • Allow the ganache to cool slightly at room temperature. You can use it immediately as a pourable glaze or refrigerate it for a thicker consistency.
